1. Steam generator operating mode from 30 to 130° C. All RATIONAL steam combi ovens have a steam generator, not direct steam generation, thanks to which incomparably better results such as productivity and quality are achieved.
2. Hot air operating mode from 30 to 300°C. The temperature range up to 300°C allows the quick compensation of 1/5 of the cooling effect when loading with a large amount of product, thereby reducing the time for preparing meals and increasing their quality. The action of the steam condenser provides control of the humidity released from the product, which enables frying, breading, grilling, pizza, etc. In this mode of operation, the convection oven does not add steam, but even condenses the moisture separated from the product, creating a dry working environment suitable for the modes listed above.
3. Combination of steam and hot air with the possibility of choosing the ratio of steam/hot air, which ensures optimal processing of the product in the different phases of preparation.
Additional features:
1. Regeneration – final completion of the dishes, providing the opportunity to serve them in the most fresh form and build a complete banquet system.
2. Low-temperature roasting of the meat, during which losses from its drying are saved and all taste qualities are preserved.
